Spicy Roasted Chicken Thighs with Miso and Ginger

Ingredients

3 T miso paste whiz pour fridge bake 30 minutes at 425°F, turning once rest 5 minutes
1 2″ piece fresh ginger, peeled and chopped
4–6 garlic cloves
zest of 1 lemon
2 T vegetable oil
1 T sesame oil
1 T rice vinegar
1 T soy sauce
1 T chili garlic sauce OR red chili paste
2 # boneless skinless chicken thighs  

Method

  1. In a food processor or small chopper whiz the rest of the ingredients until they form a saucy red paste.
  2. Dump the paste over the chicken in a large bowl or pan and mix well.
  3. Refrigerate the chicken overnight—or bake immediately.
  4. Bake in a single layer at 425°F for 30 minutes, flipping once halfway through.
  5. Rest 5 minutes.
