Chocolate SunButter S’mores Bars

1 c (100 g) graham cracker crumbs whisk mix   crumble sprinkle bake at 350°F for 25–30 minutes (should look a little underdone in middle)
1½ c (195 g) all purpose flour
½ t baking powder
½ t salt
¾ c unsalted butter, room temperature mix (2 min) mix
50 g light brown sugar spread lightly press
32 g granulated sugar
1 large egg  
2 t vanilla extract
227 g chocolate SunButter  
114 g marshmallows  
60 g chocolate chips (optional)  
  1. Preheat the oven to 350°F and grease and line a square 8×8″ baking pan with parchment paper.
  2. In a medium bowl, whisk together the graham cracker crumbs, flour, baking powder, and salt.
  3. In a large bowl using a hand or stand mixer with the paddle attachment, mix together the butter and sugars on medium-high speed until light and fluffy (about 2 minutes).
  4. Next, mix in the egg and vanilla.
  5. Once combined, add in the dry ingredients and mix to form the dough.
  6. Press half of the dough into the bottom of the baking dish.
  7. Spread an even layer of the chocolate SunButter on top.
  8. Strew marshmallows on top and very gently press in. Just a bit.
  9. Crumble the remaining graham cracker dough on top and then sprinkle with chocolate chips.
  10. Bake for 25–30 minutes or until the edges are golden brown and the center looks barely underdone.
  11. Allow the bars to cool at room temperature for about an hour.
